Plantains Simply Elevated with Lemon, Mint and Vanilla Bean Sea Salt

Plantains are a member of the banana family.  They have a higher starch content and lower sugar versus the banana.  They are prepared by either baking or frying them, they are not to be consumed raw.

If you cook the plantain that is still green, it will be more starchy and not as sweet. These chips go well with salsas.  If you choose to bake or fry them when they turn yellow, they will be more sweet.

I made this dish when the plantains were very yellow and brown. The height of sweetness!

I like baking them in coconut oil on a baking tray. Cut them in lengthwise pieces with uniform thickness.  Toss in coconut oil and arrange on tray.

Bake in the oven at 400 degrees until golden brown. 

I made a simple syrup, by taking 2 tablespoons of raw organic honey and mixing it with 2 tablespoons of hot water.  Pour this diluted honey over the plated plantains. To these we added a sprinkling of Vanilla Bean sea salt - amazing!  To finish I add fresh organic lemon zest and some fresh mint from my garden.
