Kale is my new spinach! It lasts much longer in the refrigerator, tastes delicious and is more nutrient dense.
Find fresh organic kale (several varieties), saute in coconut oil (or your choice). I throw in a bit of garlic and portabella mushrooms.
Top with smoked serrano to finish off this side dish. Make it a meal by adding shrimp, sauteed beef or chicken.
