Roasted Potato and Onion

Cut, quarter and toss potato and onion in olive oil or your choice of oil.  Spread on a pan and roast till lightly crispy and brown.  

Arrange on a platter and drizzle with more olive oil and sprinkle with your favorite sea salt blend!  We like:  sun ripened tomato or smoked serrano.
