On those nights that you didn't pull out the meat to defrost or if you didn't have the time to pull it all together - this is your go to dish!
This dish is easy to prepare, healthy and extremely tasty! Here we go....
Choose fresh whole peppers and one whole onion. Saute in coconut oil, butter or your choice of fat.
Beat a dozen eggs (pasture eggs preferably) and chop a handful of whole, fresh organic spinach.
|We threw in a couple of chunks of soft brie to the egg spinach mix!|
Bake in an oven at 375 F for 20 minutes or until sets.
