Beets, Beets, Beets....yes sound the drums I definitely move to the beat of a beet!
When I have a chance to pick up some fresh organic beets I stock up on them because they are so versatile! I love them raw, in juices, as a natural food dye, pickled and roasted!
Last night I only had a few minutes to get a side on the table with my chicken so I made this quick and easy side.
Ingredients:
1) 4 large organic beets
2) 2 tablespoons of coconut oil
3) Aged Balsamic glaze (to taste)
4) Extra virgin olive oil (to taste)
5) Aged Balsamic sea salt (2-3 pinches)
Directions:
Wash and quarter your organic beets into similar sizes and shapes. Arrange on a baking tray, drizzle with coconut oil, roast in a 400 degree oven for 20 minutes.
Plate, drizzle with extra virgin olive oil, balsamic glaze and finish with aged balsamic sea salt!
It is almost like eating candy, only better! The roasting brings out the sweetness of the beet, the aged balsamic glaze lends a sweet and sour component and the aged balsamic sea salt wraps it all up in a mineral balsamic-y goodness!
It took minutes to prepare, it's healthy, it's colorful, it's full of flavor! Perfect for a family dinner or an elegant dinner party! My two girls devoured them.
Keep it Real! Keep it Simple!

Roasted Fresh Local Beets with Sweet Onion and Rosemary
Beets...a wonderful whole food that can be enjoyed both raw, roasted or pickled!
Some interesting benefits of eating beets include: weight loss, brain and energy boost, nature's Viagra, super antioxidant, anti-inflammatory and cell detoxification and cleansing. Look up more about this amazing whole food and incorporate into your diet.
I was craving a roasted vegetable and was so happy to have come across a couple of bunches of fresh local beets!
They were so fresh, the dirt was still moist and smelled of the earth!
Ingredients:
1) 5 medium beets or 10 small beets
2) 1 large sweet onion
3) Extra virgin olive oil
4) 2-3 sprigs of fresh rosemary
5) Your choice of Old City Salts finishing sea salts
Directions:
Wash and clean your beets, then quarter and place in a large bowl. Chop your sweet onions into smaller cubes and mix in with your beets. Add your sprigs of rosemary and put in enough extra virgin olive oil to coat all pieces.
Place in the oven on a baking tray for about 45-60 minutes at 350 degrees. You want them to be well roasted, but not overdone.
At our house we put them in a large bowl and have several flavors of Old City Salt blends in salt bowls for each person to create their own finished plate!

Fresh Local Roasted Beets with Smoked Serrano Sea Salt!
Here is a simple side that is amazingly tasty, elegant and oh so colorful - the beet!
We obtained some fresh harvested local beets from Local Fare, a local farm delivery service in Saint Augustine, FL. They were picked the day before being delivered to our door.
We couldn't wait to try them so we scrubbed them, sliced them and roasted them in the oven at 400 degrees. We coated them in coconut oil, but olive oil would be good as well.
Once they are cooked to your liking, pull them out and plate them. Drizzle a little more extra virgin olive oil over them and season with Smoked Serrano Finishing sea salt! The freshness of these beets are amazing and the smoked serrano gives this dish heighten flavor and a bit of smoke.
Delicious!
